The cutting of bluefin tuna involves separating the three main parts: head, trunk, and tail. The name "cutting" refers to the sound made by the knife as it scrapes against the vertebrae during the cut. 

The different cuts will be served at the Santa Fe restaurant owned by Carpier Ahumados, located in the heart of Montseny.
